We highly recommend KAIUN (開運) Premium Ceremonial Grade. Crafted from 100% Saemidori single-cultivar plants shaded for 28 days, it yields an intense umami sweet flavor with absolute zero bitterness.
The high volcanic slopes of Yame, Fukuoka, represent the crown jewel of high-grade Japanese green tea. Blessed with rich organic volcanic ash soils, morning mist, and drastic day-night temperature swings, tea leaves grow slowly, concentrating sweet nutrients.
To lock in the maximum level of calming L-theanine amino acids and completely prevent bitter tannin formation, our farms shade the plants from harsh sun under traditional straw canopies (Honzu) for up to 28 days before the spring harvest.
Ninja-en is founded and curated by a dedicated Japanese couple, Kenji and Karen Hashimoto. Karen is a certified practitioner of the traditional Omotesenke school of tea ceremony (茶道表千家).
Drawing on centuries of oral tradition, Karen personally tastes and evaluates every single micro-lot harvested in Yame, grading them strictly for color, aroma, and bitterness. Only batches with absolute zero back-of-the-throat bitterness are sealed under the Ninja-en seal.
The global market is increasingly flooded with cheap, bitter green tea powders processed outside Japan, or chemically fertilized mass-produced leaves packaged misleadingly as "Premium Japanese Matcha." Ninja-en is our pledge of raw, single-estate origin and absolute purity. No fake blends, no artificial fertilizers, no compromises.
Do not confuse true stone-ground ceremonial shaded tea with industrially processed bulk powders. Here is the difference in craftsmanship:

We are so confident in the Omotesenke master grading of our Fukuoka Yame allocations that we remove all risk from your purchase. If you whisk your first bowl of Kaiun or Sen-ryu and find it bitter, simply email our family registry. We will refund your payment in full. No return shipping required, no questions asked.
Preparing Ninja-en matcha is an act of active meditation. Whisking slowly coaxes out the deep oils and luminous emerald foam.
Sift exactly 2g (approx. 2 bamboo chashaku scoops) of matcha through a fine mesh sieve into your dry ceramic bowl. Sifting breaks static clumps to create a silk-smooth micro-foam.
Pour exactly 70ml of hot water. Crucially, cool your water to 80°C (176°F). Boiling water will instantly scald the delicate amino acids, releasing harsh bitter notes.
Rest your bamboo chasen whisk at the bottom of the bowl and whisk back and forth vigorously in a straight 'W' or 'M' pattern. Avoid circular swirling. Whisk until a thick micro-foam blankets the surface.
We source directly from multi-generational family farms in Yame. By eliminating corporate middle-men, we pay above fair-trade prices, supporting local farmers.
Every micro-lot is strictly tasted and certified for traditional tea ceremony parameters by Omotesenke master Karen Hashimoto.
Unlike cheap blends, we guarantee 100% single-origin Yame volcanic spring-fed leaves. No imports, no chemical fertilizers.
Stored under strict 4°C cooling, nitrogen-purged to stop oxidation, and shipped directly from Fukuoka via DHL Express.
"The emerald coloration of the Kaiun grade is almost spiritual. I have never tasted a ceremonial matcha with such pure sweet micro-foam and absolutely zero back-of-the-throat bitterness. Shipping to California took only 3 days. Extraordinary D2C experience."
