Preparing Ninja-en matcha is an act of active meditation. Whisking slowly coaxes out the deep oils and luminous emerald foam.

Sift & Measure

Sift exactly 2g (approx. 2 bamboo chashaku scoops) of matcha through a fine mesh sieve into your dry ceramic bowl. Sifting breaks static clumps to create a silk-smooth micro-foam.

Temper the Water

Pour exactly 70ml of hot water. Crucially, cool your water to 80°C (176°F). Boiling water will instantly scald the delicate amino acids, releasing harsh bitter notes.

The Wrist Motion

Rest your bamboo chasen whisk at the bottom of the bowl and whisk back and forth vigorously in a straight 'W' or 'M' pattern. Avoid circular swirling. Whisk until a thick micro-foam blankets the surface.
