The terroir

Nurtured in the volcanic mists of Yame.

Deep in Kyushu, in Fukuoka Prefecture, lies Yame: a mist-bound basin ringed by volcanic mountains. Wide swings between day and night temperatures bring a natural canopy of fog that shields the young leaves and concentrates their green.

Before harvest, our growers add shade of their own. The bushes are covered for up to 28 days. In that quiet dark, amino acids rise, the leaf turns a deeper emerald and bitterness softens into a smooth, velvety cup.

Our belief

Direct from the grower. Never discounted.

MATCHA NINJA is the matcha label of WAGYU NINJA, the export brand of Camjyo Inc. (キャンプ女子株式会社) in Fukuoka. Karen Hashimoto selects the teas.

Matcha is at its best when it is fresh, so we keep the route short. We buy directly from partner farmers in Yame, at prices agreed with the growers, instead of passing through layers of trading companies, brokers and warehouses.

That is also why there are no sales, discounts or coupon codes. The price on this page is the price of the tin. Shipping is quoted separately.

The cultivar garden

The DNA of shaded green.

As with grapes in wine, the cultivar shapes the soul of the leaf. Two heritage cultivars go into MATCHA NINJA.

冴緑 · Clear bright green

Saemidori

A cross between the Yabukita and Asatsuyu cultivars. Its name means clear green, and it is prized for a brilliant emerald color and a naturally sweet profile. Very low in astringency, it makes a creamy, jade-green bowl full of umami.

  • ColorLuminous jade
  • SweetnessExceptional, rich
  • Umami finishSmooth, elegant
  • BitternessVery low

奥緑 · Deep green

Okumidori

A late-budding cultivar valued for its stability, deep color and savory body. Its name means deep green. Okumidori gives a full, robust umami with mineral notes and a toasted-chestnut aroma that lingers gracefully on the palate.

  • ColorDeep forest green
  • SweetnessSubdued, refined
  • Umami finishRobust, mineral
  • BitternessLow

The preparation ritual

The art of the shaded ritual.

Preparing matcha is not a quick caffeine fix. It is a three-minute pause between a busy day and a quiet bowl.

  1. 01

    Sift

Sift 2 g of matcha, about two bamboo scoops, through a fine sieve into a warm chawan. Sifting breaks up clumps and gives a smooth, lump-free bowl.

  2. 02

    Temper the water

Pour 70 ml of water at 80°C (176°F). Boiling water scalds the tea and brings out bitter notes. Keep it hot, never boiling.

  3. 03

    The silent whisk

Rest the chasen lightly on the bottom of the bowl and whisk briskly from the wrist in a 'W' or 'M' pattern. Avoid circles. Stop when a fine, velvety jade foam covers the surface.
