We are a small, husband-and-wife-run tea atelier based in Fukuoka, Japan. Disillusioned by mass-produced, bitter commercial tea sitting on cargo container ships and importer warehouses for months, we founded MATCHA NINJA with a singular, shared conviction:

冴緑 — CLEAR BRIGHT GREEN

Saemidori

A celebrated, rare cross between Yabukita and Asatsuyu cultivars. Translating to "clear green", Saemidori is highly prized for its brilliant, glowing emerald coloration and its exceptional naturally sweet profile. Containing absolute zero astringency, it produces a creamy, jade broth heavily rich in soothing L-theanine amino acids.

THE PREPARATION RITUAL

The Art of Shaded Ritual

Preparing MATCHA NINJA is not a fast caffeine extraction. It is a three-minute threshold between chaos and absolute serenity.

Sift & Ground

Sift exactly 2g (approx. 2 bamboo scoops) of matcha through a fine sieve into your warm ceramic chawan bowl. Sifting breaks down static clumps and ensures a perfectly velvety texture, free of lumps.

Temper the Water

Pour exactly 70ml of hot water. Crucially, the water must be tempered to **80°C (176°F)**. Boiling water will scald the delicate L-theanine amino acids, releasing unwanted bitter notes. Keep it warm, not boiling.

The Silent Whisk

Rest your bamboo chasen whisk on the bottom of the bowl and whisk back and forth vigorously in a straight **'W' or 'M' pattern** using your wrist. Avoid circular swirling. Whisk until a dense, velvety jade micro-foam coats the surface.
